OK so there is a month
hiatus between writing post.
It all started with a trip
to the Absinthe Salon for my birthday.

Landing in Surry Hills from
Belle Epoque Paris, behind the black drapes is a room done up in Art Nouveaux
style where period watiers serve Absinthe.
From what I could find out,
there isn't the one kind to get, there are up to 24 different French and
Swiss absinthes of up to 75% alcohol content.
Each table has a fountain
designed to drip iced water into the cup.
You're only allowed a
maximum of three drinks.
HOW TO:
Place your glass under the
fountain tap
Place the spoon across the top fo
the glass
Place ‘a la perruche’ sugar cube on to your spoon and directly under the fountain tap.
So the tap to let water slowly drip on the sugar cube.
The absinthe will begin to ‘louch’, go cloudy and mix with the water.
You want your drink reaches 2 water to 1 absinthe
Stir with the spoon, and enjoy.
What a great way to start a
night with a powerful kick from the green fairy.
Everyone can write descriptions of
what is it like, how it looks, tastes, feels.
Painters paint it, writers write
it, I say, you need to drink it.
